Britain will win a record number of medals at the London 2012 Olympics, predict scientists.

The researchers, who accurately forecast the medal haul at three previous games, have calculated Team GB will take home a total of 62 medals.

This tally beats the post-war record of 47 we won in Beijing in 2008 and will place Britain fourth in medal table.

The scientists expect Britain to take 25 golds - six more than in Beijing - and we will only be beaten in the gold standard by the U.S. and China.

Emily Williams, a British research assistant at The Tuck School of Business in New Hampshire, carried out the study, using an economic formula created after the 1996 Atlanta Games.

The figures are based on population, per capita income, past performances of the athletes and the advantage of hosting the games - and not the form of competitors.

These have been the crucial factors dictating national Olympic medal totals over the past four decades, according to economists.

In Beijing, they forecast the U.S. would top the medals table, but China would win the most gold medals, accurately predicting 36 golds for America.

Ms Williams told the Sunday Times: 'It's very exciting for Britain. The formula has been so reliable in the past there's no reason to think it won't be this time.'

Britain can expect 15 extra medals because it is hosting the Olympics with six of those being gold, but Ms Williams admits:' We're not really sure why hosting the Games has such an effect but it does.'

Last week UK Sport, the government's funding body, said it expected team GB to win at least 48 medals, just one more than our haul four years ago.

China is predicted to win more golds than France because its 1.3 billion population compensates for its low per capita income.

Another factor which favours Britain is that countries that did well in Beijing will replicate that in London with Russia, Australia and Germany likely to fall below expectations again.

Report: Annan says efforts in Syria have failed

BEIRUT - Special U.N. envoy Kofi Annan acknowledged in an interview published Saturday that the international community's efforts to find a political solution to the escalating violence in Syria have failed.

Annan also said that more attention needed to be paid to the role of longtime Syrian ally Iran, and that countries supporting military actors in the conflict were making the situation worse.

"The evidence shows that we have not succeeded," he told the French daily Le Monde.

Annan, the special envoy for the United Nations and the Arab League, is the architect of the most prominent international plan to end the crisis in Syria, which activists say has killed more than 14,000 people since March, 2011.

His six-point plan was to begin with a cease-fire in mid-April between government forces and rebels seeking to topple the regime of President Bashar Assad. But the truce never took hold, and now the almost 300 U.N. observers sent to monitor the cease-fire are confined to their hotels because of the escalating violence.

Activists reported more than 50 people killed on Saturday alone, after some 800 people last week.

Annan defended the unarmed observers, saying it was not their job to stop the violence, but to monitor the sides' adherence to the truce.

He offered few suggestions on how the plan could be salvaged, only saying that Iran "should be part of the solution" and that criticism too often focused on Russia, which has stood by the regime.

"Very few things are said about other countries that send arms and money and weigh on the situation on the ground," he said, without naming any specific countries.

It is unclear what role Annan envisions for Iran, a longtime Syrian longtime ally that has stood by the regime throughout the uprising. Tehran's close ties could make it an interlocutor with the regime, though the U.S. has often refused to let the Islamic Republic attend conferences about the Syria crisis.

Russia provides the Assad regime with most of its weapons. No countries are known to be arming the rebels, though some Gulf Arab states have spoken positively of doing so. The U.S. and other Western nations have sent non-lethal aid, like communications equipment.

The Syrian uprising began in March, 2011, when people first took to the streets to call for political reforms. Since then, the government has waged a brutal crackdown, and many in the opposition have taken up arms, sidelining peaceful activists and changing the conflict into an armed insurgency.

Scores of independent rebel groups now operate in the country, regularly attacking regime bases and convoys.

Activists in Syria on Saturday reported fierce government offensives to try to retake rebellious areas outside of the northern city of Aleppo and near the capital Damascus, as well as government shelling across the country.

The Britain-based Syrian Observatory for Human Rights, which relies on an activist network inside Syria, called the bombardment of a number of villages in Aleppo province "the most violent" since the army launched a recent campaign to retake control of the area.

The group said that rebels in the area had killed many regime soldiers in recent months. Three rebels and three civilians were killed in the province Saturday, it said. Five government soldiers also were killed when rebels blew up their vehicle.

The Observatory said at least 35 rebels and civilians were killed nationwide, plus 19 government soldiers.

The activist claims could not be independently verified. The Syrian government rarely comments on its military operations and blames the uprising on foreign-backed gangs seeking to weaken the country.

The violence has raised fears that the unrest will spill over into Lebanon, which has extensive sectarian and political ties to its eastern neighbour.

On Saturday, shells fired from inside Syria killed two Lebanese civilians and wounded 10 others, security officials said, in the latest incident of violence spilling across the border.

One woman was killed when a shell hit her home in the Wadi Khalid area of northeast Lebanon, also wounding five others. Another shell hit the nearby village of al-Hisheh, killing an 8-year-old boy and wounding his father and four other children.

The officials spoke on condition of anonymity in line with government regulations.

Despite mounting international condemnation, Assad's regime has largely held together. On Saturday, however, France announced the defection of Brig. Gen. Manaf Tlass, an Assad confidant and son of a former defence minister who helped ease Assad into power.

Tlass is the highest ranking official to abandon the regime so far, and Western powers and anti-regime activists hoped his departure would encourage others to leave, too.

News of the defection largely overshadowed an international conference in Paris on Saturday attended by the U.S., its European and Arab partners and members of Syria's fractured opposition.

The so-called "Friends of Syria" said they would provide means for the opposition in Syria to better communicate among themselves and with the outside world and increase humanitarian aid.

They also called on the U.N. Security Council to adopt a resolution that would force the regime to comply with the two peace plans that have been largely ignored by both sides in the conflict.

Syrian allies Russia and China would likely veto any resolution seen as too critical of the Syrian government, as they have in the past.

About 100 demonstrators marched against Assad's regime in Paris on Saturday. Many were disappointed that the Paris conference had not led to more specific actions against the regime.

"Meeting just to talk is useless," said protester Hende Khattav, a Syrian who has lived in Paris for 37 years. "We have to do something. There has to be a useful action to make this massacre of the Syrian people stop."

Mars rover beams amazing panorama back to Earth (+video)

NASA's Mars Opportunity Rover has sent us a postcard, a stunning panorama view of the Red Planet, stitched together from 817 different images taken over six months.

During the three-year trek of NASA's Mars Rover Opportunity from Victoria crater to Endeavour crater, rover planners captured a horizon photograph at the end of each drive. 309 images taken during the 13-mile journey appear in this video.

The new Martian panorama was snapped by NASA's Mars rover Opportunity, a six-wheeled robot that has spent more than eight years exploring the Red Planet. The image shows a full-circle view of Mars near a spot called "Greeley Haven," where Opportunity hunkered down during its last Martian winter.

"The view provides rich geologic context for the detailed chemical and mineral work that the team did at Greeley Haven over the rover's fifth Martian winter, as well as a spectacularly detailed view of the largest impact crater that we've driven to yet with either rover over the course of the mission," said Jim Bell of Arizona State University in Tempe, the lead scientists for Opportunity's Pancam imaging system, in a statement today (July 5).

Opportunity's new Mars panorama is actually a mosaic of 817 different images combined like a giant puzzle to make one huge image. It shows a stark landscape broken only by the Opportunity rover's own tracks and the robot's solar array.

While there are varying shades of red (and even some blue) in the Mars panorama, the image is actually a false-color view. Its colors were added artificially to "enhance the differences between materials in the scene," NASA officials explained in an image description. [More Mars Photos by Opportunity Rover]

Opportunity created the Mars panorama between Dec. 21, 2011, and May 8, 2012, while it was stationed at Greeley Haven, an outcrop of rock located on the rim of the giant Endeavour crater that has been the rover's main object of study since August 2011.

Rover mission managers named the outcrop as a tribute to Mars scientist Ronald Greeley (1939-2011), who served as a mission team member and taught planetary science at Arizona State University.

"Ron Greeley was a valued colleague and friend, and this scene, with its beautiful wind-blown drifts and dunes, captures much of what Ron loved about Mars," said Steve Squyres of Cornell University, Ithaca, N.Y., principal investigator for Opportunity and Spirit.

NASA launched Opportunity and its sister rover Spirit toward Mars on a mission that was originally slated to last 90 days. The two rovers far outlasted their warranties, with Spirit exploring its Gusev Crater landing site until getting stuck in deep Martian sand. NASA declared Spirit's mission over in May 2011.

Opportunity, meanwhile, keeps on trucking across the Martian surface.

On Monday (July 2), Opportunity logged its 3,000th Martian day, which mission scientists call "sols." The rover has driven a total distance of 21.4 miles (34.4 km) since landing on Mars, according to mission managers.

The New Elegant Black Woman: The Great Self-Improvement Debate

You may have noticed some of the negative critiques of my blog and goal to become an EBW. You may have experienced similar negative comments if you are attempting to become more feminine or undertaking any self-improvement journey. I thought it would be useful to myself and hopefully others to present a series of arguments for and against my goals. This will not only help me fully understand and accept my reasons for doing this but it will also demonstrate that I can see the points of those who are critical. The first installment will be The Great Self-Improvement Debate!


Every individual is unique and the way they view the world and others depends on so many factors including: genetics, place of origin, early childhood and lifelong experiences, parent and community socialization (e.g., teaching how to be the ideal member of a gender or "race"), culturally-transmitted views, religion, current events, media consumption, education, intelligence, personality, mental health, career choice, socio-economic status (SES), friends, and individual preferences. I'm sure there are other factors but that is a long list of things that can result in two people reading, seeing, or hearing the same thing and having completely different reactions!

I think that the ideal woman is understanding, compassionate, caring, intelligent, patient, and a good communicator and these traits require that she accepts that all of these variables may influence her reactions and those of others. This means that given an individual's variables (e.g., place of origin, SES, parent socialization etc.) it is understandable that the person thinks the way they do. It is therefore unwise (and just mean) to label someone as stupid, wrong, part of the problem, a traitor, lost, confused, inferior and other ad?hominem attacks?just because they think a certain way. Given their circumstances their thinking makes sense and will appear "correct" to most people with the same circumstances!

Attacking a person's character based on their opinions or preferences is not only illogical but it makes you an unpleasant person to be around! Others will limit their communication with you if you have a bad habit of calling them names, putting them down, and using ad hominem attacks when they state their views and preferences. A more ladylike thing to do is listen, state your agreement or disagreement based on the topic of discussion, keep your composure, and refrain from insulting the person's character. You may agree or disagree with the person at the moment, but changes in your circumstances (e.g., learning a great deal, living in another country) may result in you flip-flopping and agreeing with something you were once vehemently against! That is fine because it makes no sense to continue believing the same thing after learning new information that changes the situation.

I see most things as being shades of grey not either black or white and most things are neither entirely right or absolutely wrong. Many people are VERY uncomfortable with this uncertainty and are only able to use dichotomous thinking. What's perfect in some situations is inappropriate in others, what you love today you may hate tomorrow, the best solution may be the hardest, the worst solution may be the most acceptable to others and so on. So I think that for myself and others who see the value of becoming an EBW it is important to consider that your opinions and preferences may appear logical and healthy to some but irrational and harmful to others. Therefore don't become weighed down by that possibility and instead focus on whether your opinions and preferences are beneficial to you and will make your life better. You will never please everyone with your opinions and preferences so don't even try but at least you can be pleased with yourself.

With that said I will present arguments for and against trying to improve oneself and a solution that may satisfy anyone who is for or against self-improvement. Certain important assumptions are made within the arguments (boldfaced) but the assumptions are not always true, there possible exceptions, and they are debatable themselves.

Pro: Why Attempting Self-Improvement is a Positive Thing

  1. Not seeking to improve oneself is settling for being mediocre. Many people are unhappy being mediocre and feel happier after they have improved. Improvement increases happiness.
  2. Those who constantly improve themselves by learning more, seeking higher education, networking with new people, looking for ways to earn more money, seeking promotions and career advancement, learning to cope better with their's problems and shortcomings, learning how to improve their's thinking, or learning how to improve their image tend to reap the best rewards in life.?
  3. If you want a good life you have to work for it. Resources are limited and there is competition (e.g., scholarships, good jobs, loans, desirable partners) so you have to be better than others in order to reap the best rewards.?
  4. Self-improvement involves deep introspection about one's personal goals, where one can improve, and learning many possible methods to improve and achieve those goals. High achievers, successful people, motivated people, and those who wish to improve their circumstances all go through these processes on a regular basis in order to maintain their position at the top or achieve a higher status. If one wants to be a high achiever or successful they should emulate people who have achieved that status.
  5. Low achievers, unsuccessful people, unmotivated people and those without means rarely go through the self-improvement process, do not understand it's value, may expect success and goals to be achieved without effort, expect other people to provide what they need, or believe that they have no power to improve their status. If you reject self-improvement you may stay or become a low achiever or unsuccessful person.?
  6. Individuals are opposed to the self-improvement goals of others due to personal reasons such as: beliefs the goals are unattainable; concern for others wasting their time or that the improvement will not bring happiness; fear that achieving the goal may harm the individual, the observer, or others; fears of feeling insecure or left behind if others improve; and fear that one will lose status or certain benefits if others improve. (This is an ad hominem attack so although I would not use this in a debate, one should be wary that personal reasons may be behind the opposition).
Con:?Why Attempting Self-Improvement is a Negative Thing
  1. There is no need to try to improve yourself because you are your best self right now and perfect the way you are. Someone will accept you as you are so there is no need to try to change in order to fit in, make friends, or find a partner. Trying to improve or change means you think there is something wrong with you and you are not good enough. No one is better than anyone else. You may admire someone else but that individual may be very unhappy with themselves and wish to be more like you (i.e., the grass is always greener on the other side).??
  2. Once you achieve one goal you will move on to another and never stop and just enjoy yourself and your life as it is. Especially if the improvement is something superficial (e.g., appearance, speech) then you will waste time that you could be spending doing something else?that is more important. Desire is the source of unhappiness. You may spend a lot of time and energy trying to improve but fail anyways because societal forces and luck determine success more than individual effort.
  3. Improving may bring on new problems (e.g., financial drain, lack of free time, negative attention)?that you didn't have to deal with before. You may regret the changes you made but won't be able to go back to where you were before.?
  4. People don't really change.?You are who who always will be. So trying to improve means you are trying to be someone you are not and that is being fake. Fake people are unpleasant to be around and you won't feel good about yourself. People won't really be liking you for you so your relationships will be based on a lie.
  5. The malicious influence of society makes you feel like you should change or you are not good enough. Society makes you want to conform to the majority and what those in power want, not out of concern for you, but so that the status quo remains, they maintain their power, and you spend money. It is a form of social control that is harmful to the individual. So if you try to change yourself then you are just caving in to society's pressure and allowing yourself to be unfairly manipulated and distracted from important things.
  6. People should try to be satisfied with themselves and their lives as they are now.?Happiness is in the eye of the beholder and it's your thoughts that make you unhappy not your current situation. If you could learn to think more positively about your past, present, and future then you could be happier without needing to change yourself (note that learning implies change lol).?
  7. People try to improve because they have personal issues. They are unsatisfied with themselves, have self-hate and low self-esteem, think other people are better, or they are confused about who they are. They are actually feeling sad so they set self-improvement goals in the hopes of becoming happier. People with high self-esteem accept themselves and don't feel the need to change. (These are ad hominem attacks that should not be used in debates but for some people they may be true but not for others).?
Solution
My solution to this debate is a blend of considerations based on all of these arguments and I consider both sides. However, I am more partial to the Pro side probably due to personal reasons. For instance, the Pro side fits with my educational teachings, I believe more that effort and hard work can achieve things despite luck or privilege, I believe that I have power and control over my life, I have achieved a lot so I expect that I can achieve more and be successful, the people I know have improved their lives, I don't feel pressure offline in Canada not to improve, and I don't see much harm in my goals. I believe people are constantly changing, I think that people may be sure of their preferences and opinions but never fully understand why they developed them (i.e., one never really knows oneself), and we are always conforming to something, even the attitude that one should never conform. My solution or mental resolution is the following:


Accept yourself as you are now, forgive your shortcomings, and realize that there are great things about you just the way you are. Also accept that you have personal power to improve your life and there is nothing wrong with doing so. Every experience changes parts of us while others stay the same. Success may be due to luck or hard work. You may feel societal pressure to do some things, but not others, and actually not mind conforming and that is okay. Everything you do does not have to be a form of protest and sometimes what the masses do and like can be quite satisfying and beneficial (otherwise no one would accept it). The old you and the new you may be different but you can accept them both as parts of who you are. Your identity does not change so no matter what, YOU will always be YOU, so there is no need to resist trying new things or doing things differently. What you like, how you look, what you think, and how you behave may constantly change but YOU will always be YOU. No one is entirely good or bad, self-loving or self-hating, successful or unsuccessful so whatever you do, own it, accept it, and try to find happiness however you can :)

This is SCIENCE FRIDAY. I'm Ira Flatow. Up next on our summer science issues that we'll continue. Joining me now is editor - multimedia editor Flora Lichtman. Hi, Flora.

FLORA LICHTMAN, BYLINE: Hi, Ira.

FLATOW: Hi there.

LICHTMAN: That's right. You know how I love news you can use, and we have got more of it coming. It turns out that the grill pit is a hotbed of science. So a little later, just so you can get excited, we have a futuristic ketchup jar and the microbiology of pickles. But first, best practices for a pathogen-free picnic.

FLATOW: You mean, ah, the pathogens in potato salad and stuff like that.

LICHTMAN: Yeah. You might want to pass, but don't blame the mayonnaise it turns out. Here to clear mayo's name and to share other tips is Angela Fraser. Fraser is a professor and food safety specialist at Clemson University in South Carolina. Welcome to the show, Dr. Fraser.

DR. ANGELA FRASER: Thank you. Thank you. Appreciate being invited.

LICHTMAN: So let's start with the mayo. Does it get an unfairly bad rap when it comes to food poisoning and picnics?

FRASER: Yes, particularly commercially-prepared mayonnaise, so the mayonnaise you would go to the grocery store and buy, you know, either in a plastic container or in a glass jar. The pH or the acid level of the mayonnaise is so low that most pathogens will not grow in it.

LICHTMAN: Wow. So when people point to the chicken salad, that's not necessarily true?

FRASER: Well, it's when - when I'm talking about the pH of mayonnaise, I'm talking about the pH of mayonnaise in and of itself. But when you begin to mix the mayonnaise with other ingredients that have a higher pH, you alter the overall pH. And so the problem is, is when you're mixing what we would call low-acid foods, such as chicken, potatoes, pasta, lots of vegetables, with mayonnaise, you increase the pH. And then that type of a mixture if it's not held at proper temperatures can support the growth of, you know, pathogens that could make you sick.

LICHTMAN: OK. So you would still be wary but...

FRASER: Yes.

(LAUGHTER)

FRASER: Yes.

LICHTMAN: What about melons? They seem so harmless, but I read that that they can cause problems too.

FRASER: Yes. And there are some fruits that also have a high pH. Let me just briefly explain what is pH: pH is measured on a scale of zero to 14, and a neutral pH is seven. Most harmful bacteria cannot grow in what we call high-acid foods, so foods that have a pH of 4.6 or less. If the food has a pH of above 4.6 - and there's a way that you measure it - that food can potentially support the growth of harmful bacteria. And so melons and some other fruits have pH values of above 4.6, making them low-acid foods. Low-acid foods must be kept hot or cold, and so, obviously, you're not going to keep melons hot, therefore you need to keep them cold.

LICHTMAN: And don't leave them on the counter, right?

FRASER: Correct. And the general rule is, is you don't want to keep those types of foods on the countertop for more than four hours. And, you know, sometimes the mistake people make is that a food might be out on a countertop for four hours, and they'll say, oh, forgot it and let me just put it back into the refrigerator - no. Once a low-acid food - and we also call those potentially hazardous foods - are sitting out, you know, not under temperature control, after four hours, you need to either eat it up within four hours or throw it out.

LICHTMAN: Mm-hmm. And it's the rind, too, can pick up nasty bacteria.

FRASER: Yeah. Think about where, you know, you harvest a melon. It comes from the ground. I mean, bacteria are everywhere, and so bacteria in soil, in the air, on surfaces, et cetera. And so, you know, so the rind can become naturally contaminated, or it could become contaminated during the harvest process by the worker who's harvesting the melon or even during the cleaning process or in a grocery store. You know, there's a lot of research being done on how are melons becoming contaminated, and so there's still many unknown questions.

LICHTMAN: Mm-hmm. What about sugar? Does sugar make things inhospitable for bacteria to live in? Is that why people leave pies out?

FRASER: Well, another feature of what we would call a non-potentially hazardous food - and, again, a non-potentially hazardous food does not need to be kept under temperature control - is something called water activity. And so what that is is the amount of water that is available for these microorganisms to function. And when you add sugar or salt or some other substances to foods, you decrease - you potentially decrease the water activity of the food. So foods that have a high-sugar content generally have a lower water activity, and so harmful organisms cannot grow in that food, which is why some foods like some fruit pies, not all, can be left out at room temperature, and, you know, you don't worry about getting sick from eating that.

FLATOW: Mm-hmm.

LICHTMAN: And is it - what about public grills? Should we be wary?

FRASER: I personally would. You know, I...

(LAUGHTER)

FRASER: When I was checking the research to see if anybody has actually done a - performed a study, you know, where they've gone out and they've collected some samples, you know, surface sample, swab the surface of the public grill and determine, hey, what might be on the grill surface? And I could not locate any study that had been conducted.

And so my biggest concern is, you know, there's a lot - a lot of times, you see these public grills, there's just like a thick crust on the grills. You know, some of these pathogens might survive under that crust. We don't know. And so if you just fire it up and think that if, you know, letting the fire, you know, try to burn off whatever might be on that grill, that it would be safe, we don't know if that is true. And when I don't know if something is true, I err on the side of the caution.

And so what I would recommend is that you simply put like a clean piece of foil over the grill and then, you know, cut some holes in it, and put your meat or whatever you're grilling on top of the foil. That way, you don't have to worry.

LICHTMAN: I will never look at a public grill the same way.

(LAUGHTER)

FRASER: And who knows what other kind of substances might be on the grill? I mean, that's - I would be concerned about that as well, not just microorganisms.

LICHTMAN: Yeah. What about defrosting meats and stuff out of the fridge? I've heard both - it can go both ways on that. What's the real deal?

FRASER: Yeah. There is, you know, there are some people who deviate from the traditional recommendation. What I would recommend is that defrosting or thawing of raw meats, fish and poultry should be - should take place under what we would call temperature control. So it should take place in a refrigerator, during the cooking process or under cold, running water. Now, I typically don't advise consumers or anybody working in the food industry to use cold, running water because it's probably not a good use of resources because you'd have to let the water run for, generally, about 30 minutes. So thawing in the refrigerator or during the cooking process, which would include the microwave, would be the best way.

LICHTMAN: Do you have any other take-home tips for people who are barbecuing or picnicking this summer before we have to go?

FRASER: I would suggest that people prepare as much of their foods at home where they have access to water and a refrigerator. So if you're going to make hamburger patties, make the patties at home, you know, put them into a container and so that you minimize handling at the picnic site.

Another thing that I'd like to point out is, we checked the CDC data, and in the past 10 years, there has actually been 193 outbreaks attributed to foods that were prepared at a picnic. And these outbreaks sickened over 5,000 people. So it can happen.

LICHTMAN: Tread carefully.

FLATOW: Yeah.

FRASER: Tread carefully, exactly.

LICHTMAN: Well, thanks for joining us today, Dr. Fraser.

FRASER: OK. We have - I very appreciate it. Thank you so much.

FLATOW: Wow. That was interesting. I didn't realize all those pathogens - got to be careful. Well, what else have you got us for us?

LICHTMAN: The hidden trap of your picnic where...

FLATOW: Summer science, barbecue blowout continues.

LICHTMAN: It continues, and you're going to relish the next one, Ira.

FLATOW: Ooh.

LICHTMAN: Ooh, I know.

(LAUGHTER)

LICHTMAN: Engineers at MIT, who usually spend their time on trivial things like nuclear power plants and efficiency in wind turbine surfaces, have finally taken on a relevant problem, a condementory(ph) problem: the jammed ketchup bottle. In fact, their invention could turn this sound...

FLATOW: Hitting that bottle, right?

LICHTMAN: You know it well.

FLATOW: Yes.

LICHTMAN: At least I do.

(LAUGHTER)

LICHTMAN: Into a relic of another time.

FLATOW: Hmm, like the busy signal or the dial-up modem that I...

LICHTMAN: Yeah, exactly.

(LAUGHTER)

FLATOW: Kripa Varanasi, a mechanical engineer at MIT in Cambridge and his colleagues seemed to have solved this condiment conundrum. From their weekly glide jar, ketchup flows freely no matter how little is left. And he's here to tell us about it. Welcome to the program, Doctor Varanasi.

DR. KRIPA VARANASI: Thank you very much.

LICHTMAN: So, you know, I always thought that this is a ketchup problem, not a jar problem, but it sounds like maybe I was wrong.

VARANASI: Yeah. It's actually both, but the resistance to flow mainly comes from the interface between the ketchup and the jar. And by changing that interface using this new coating that we've developed, which is super slippery, we can get the ketchup to flow out of the jar very easily without sticking to it.

LICHTMAN: So give us the simple, thumbnail sketch. How does this coating work? What is it made of?

VARANASI: So the coating, is essentially - what we call it a structured liquid coating, so it has both a texture to it and a liquid that fills the texture.

FLATOW: Is there a way to think about this? Do you have an analogy? It's hard for me to imagine a solid liquid.

VARANASI: So if you - analogy that one of my graduate student uses is, you know, if you take gum out of, you know, gum and try to throw it out with your - with dry fingers, it wouldn't slide off, right? But if you have a - if you wet your fingers, then the fingers have a texture, and the liquid would wet those textures and then the gum slides off very easily. So it is a lubricant layer at the interface, right, that allows you to slide off anything very easily.

LICHTMAN: And how do you get it in the jar?

VARANASI: So we are developing various manufacturing processes, and one of them is a spray-based process, and so we spray on this coating on to the bottle.

LICHTMAN: And could it come off in the bottle and then assemble itself in your intestines?

VARANASI: No.

(LAUGHTER)

VARANASI: We wouldn't want that to happen.

LICHTMAN: No, indeed.

VARANASI: So the coating, preferentially, actually self-assembles on the jar and wouldn't come off into the food.

FLATOW: And the ketchup just slips right out of the jar without having to hit it.

VARANASI: Exactly.

LICHTMAN: And does it work on others - does it work on anything you put in that jar?

VARANASI: Yes, so...

LICHTMAN: What about something stickier, like peanut butter?

VARANASI: Yes. So we - so what we are trying to do, the engineering - so this coating can be engineered for a different application. So it could be engineered for, you know, things like mayonnaise, which are very hard to get out. And we have some demo videos that we have that were in the news. We have - you can engineer this to slide ice, you know, for applications like deicing on aircraft engines or wind turbines or power lines. It could be applied to things like droplets that need to be shed in condenser tubes in power plants, even cosmetics. For example, you know, you have an expensive lotion...

LICHTMAN: Let me just interrupt you for a second and let everybody know that this is SCIENCE FRIDAY on NPR.

VARANASI: Yes. So...

LICHTMAN: I'm Flora Lichtman.

VARANASI: So the coating, like I said, can be engineered out of different materials. For the ketchup bottle stuff, we use food-based materials.

LICHTMAN: So proprietary, I guess, is the...

(LAUGHTER)

VARANASI: Proprietary at the point, at the minute, yeah.

LICHTMAN: Thank you, Doctor Varanasi for taking time to be us. This is fascinating, and I know your other work is on other surfaces. So we'll have to keep after that, too, right?

VARANASI: Yeah.

(LAUGHTER)

LICHTMAN: Doctor...

VARANASI: Thank you very much.

LICHTMAN: Thank you. Dr. Varanasi is a mechanical engineer at MIT.

FLATOW: All right. So he has covered ketchup and mayo. What's next on our barbecue...

LICHTMAN: Well, you might think it's mustard...

FLATOW: Of course.

LICHTMAN: ...but it's not. It's the pickle.

FLATOW: The pick, my favorite.

LICHTMAN: It's the pickle of the week, and it might be the pickle of every week because I - it turns out, I love pickle science. I didn't know this, but there are multiple kinds of pickles.

FLATOW: Right.

LICHTMAN: So there's the salt brine, sort of fresh pickle, I found out from fermentation expert Bob Hutkins. But there are also pickles that are fermented. So enlist bacteria to do the job for you, basically.

FLATOW: You have to put bacteria into the pickle jar.

LICHTMAN: It turns out that you do not have to put bacteria in, they come with, but it's a good question because they're not the only ones on the cucumber to begin with. Here's Bob Hutkins.

BOB HUTKINS: The bacteria that surround that cucumber are quite diverse, and many of them, in fact, most of them are really not the ones that we want to grow. The lactic acid bacteria are probably outnumbered by 1,000 to one or even more by undesirable bacteria that would otherwise spoil that cucumber.

So what's done is to apply this salt brine, and that salt brine, in large part, will inhibit those undesirable organisms. And they create what we call a selective environment promoting the growth of salt-tolerant lactic acid bacteria.

LICHTMAN: So it's amazing. Like in every cucumber, there's this microbiological war going on in the beginning. And, you know, we help them by creating this sort of salty environment that only the, you know, from our perspective, the good bacteria can live in.

So what occurred to me is, you know, why are these bacteria safe for us, whereas other bacteria make us sick?

FLATOW: Right.

LICHTMAN: And it turns out to be a really interesting story.

HUTKINS: You know, over the course of evolution, and let's face it, these bacteria have been around a lot longer than we have, there are some lactic acid bacteria that have even the vestiges, the genetic remnants of virulence genes, i.e., genes that at one time may have been responsible for causing disease, but these bacteria have been more or less domesticated. So there is some notion that there is co-evolution that the bacteria that are associated, for example with the healthy gut, have co-evolved with human kind and have become specialized in that environment. Good for us.

LICHTMAN: The domesticated bacteria.

FLATOW: There you go, making pickles.

LICHTMAN: And we - you can make them.

FLATOW: You can make them at home.

LICHTMAN: It turns out, yeah. I asked Bob Hutkins, and he gave us a little recipe with the caveat that he actually hasn't made them.

(LAUGHTER)

LICHTMAN: He says it's really easy and you...

FLATOW: You tried this at home (unintelligible).

LICHTMAN: Exactly, or you can go to our website and look at how to do it. It's pretty simple. You just put them in a salt brine, and you have to get the brine right and the weight right, but...

FLATOW: Mm-hmm. Some people put them out in the sun. I remember seeing people put them in the jar, they put them out in the sun in the backyard?

LICHTMAN: Yeah. Apparently, there is some evidence that the sun helps combat the other bad bacteria. In fact, I read that even industrial makers put them in these vats, but Hutkins said that they're usually closed. You want to keep the other stuff out.
